Picnic: My Light Potato Salad with Roast Beef

This is a super simple recipe easy to bring on a picnic, and perfect to prepare the day before. Plus as a bonus it is really healthy! For 4 servings you will need:

6 medium sized boiled Potatoes sliced in big chunks
1 cup of fresh shopped Dill
1 small red Onion in very thin slices
6 medium hard boiled Eggs cut in small pieces
3 cups of natural Yogurt
Salt and Pepper
1 cup of Caper
2 lbs sliced Roast Beef

Mix potatoes, dill, eggs and onions with yogurt, add salt and pepper, and sprinkle with caper. Serve with roast beef.
